Herb's grilled, stuffed salmon


The stuffing is a slight variation of a recipe I saw Emeril use to stuff trout with. Saute onions and scallions in olive oil until translucent (clear), adding seasonings to taste. Remove from heat and add tuna, lemon juice, more olive oil and additional seasonings, if necessary. Place salmon on foil and stuff. Rub olive oil lightly on salmon to prevent sticking. Wrap tightly and grill on medium heat for about an hour or until flakey.
